Throughout his more than 20 years in the dining industry, Chef Valentino Sandoval has been gathering inspiration for a restaurant of his own. Each time he learned a new way to cook a vegetable, slice a cut of meat or arrange a plate, he would file it away for future use. After two decades of polishing his vision, Sandoval is preparing to open La Calle, a Mexican restaurant at 10 South St. near City Hall.
